Cultivation: | Vines are regularly ploughed to avoid the use of weed-killer and pruned short to regulate both growth and yields. Vine shoots are tied at the most favourable angle to ripen the grapes. Machine harvested at prime maturity, early in the day to avoid warmth oxidising the grape. All stalks and leaves are removed to avoid flavour corruption |
Vinification: | Made by skin maceration (the juice macerates on the skin prior to pressing). This process increases the aromatic potential of the grape and its liquid structure. Controlled low temperature fermentation is used which also enhances the fruit flavours of the wine |
