Looking for a smaller bottle of Sauternes?  We are lucky to have some 2011 from Lamothe-Despujols.  We also have 2012 in a normal sized bottle but I find this size pretty to produce at the end of a meal for the dessert.  A fabulous example of a sauternes, neither too sweet or too dry, perfect for aperitifs or as a standard dessert wine.  For those special occasions, treat yourself.  This is a formidable wine that will lay down for up to 30 years so invest now for the future!

Tasting Notes: Excellent and powerful nose as well as providing a full and rounded palate with discrete notes of candied fruits and white flowers.  Some liquorice on the finish.
Classification: AOC Sauternes
Grape: Sémillon 85 % Sauvignon 10 % Muscadelle 5 %
Strength: 13.5%
Serve at: Chilled 4°C
Serve with: Extremely suitable as an aperitif or with foie gras.  Excellent with fowl, sweet or salty and spicy dishes, sheep’s cheese,  blue cheese and of course most desserts, especially fruit tarts.
Soil: Sandy gravel mix on a subsoil of deep gravelly clay
Yield: 12 hectolitres/hectare
Cultivation: Manual cultivation with regular soil aeration and pruning to manage quantity and quality on the vines. Manual harvest to select the grapes once dehydrated and at or immediately after the first frost.
Vinification: Slow, gentle pneumatic pressing (Less than 2 hectolitre output per hour) .  Jus selected for quality then fermented for between 30 and 60 days in concrete tanks.  Vinification in oak barrels for between 28 and 30 months depending on the year and harvest.  Racking and centripetal filtration before bottling.

    This is a lovely dessert wine. It is a delight to drink with cake and I tried it with blue cheese – stunning!
