Tasting Notes: Intense and bright garnet colour within delicately woody and sweet, fruity nose that develops to flavours of toast, peppery spices and a dash of vanilla.  In the mouth it is full, round, unctuous reflecting the Merlot grape with velvety tannins from the Cabernet Franc to deliver a subtle and elegant flavour and long, excellent finish.
Classification: AOP Saint-Émilion Grand Cru
Grape: 70% Merlot, 30% Cabernet Franc
Strength: 14%
Serve at: Room temperature 16°C to 18°C
Serve with: Red or white meats, grilled meats and all types of cheese.
Yield: 45 hl/ha
Soil: Either clay or sand depending on each grape plot.  Both mixed at assembly.
Cultivation: Biological production with manual intervention and selection at harvest.  Natural plant growth allowed between the vines (grass)
Vinification: Manual harvest and selection with secondary manual selection of grapes prior to vinification.  Spontaneous alcoholic fermentation in thermoregulated stainless steel vats for 15 to 30 days.  The wine is then aged in specially selected French oak barrels.
