Serve at: Room temperature 16°C to 18°C

Yield: 50 hl/ha
Soil: Gravel Limestone/Limestone/Clay Limestone
Cultivation: Simple guyot pruning.  The walkways are worked every second row to promote root growth and aeration of the soil. Manual stripping and thinning of branches and excess leaf with manual harvest and sorting of grapes by density (flotation system to select best grapes).  Each parcel is harvested separately.
Vinification: Vinification is then done parcel by parcel in stainless-steel temperature-controlled tanks using alcoholic fermentation with agitation followed by malolactic fermentation in tanks.  Ageing in the tanks (65%0 and barrels (35%) for a 13 month period.
