Le Temps Volé means Stolen Moments and you need to find some quiet stolen moments to try this wonderful wine.  Only produced from harvests of exceptional quality we are lucky to have obtained some 2009, the last time it was produced.  Try it and I guarantee you will like it.  We will shortly be adding detail of the 2015 wine as it will be the first to be produced since 2009 and we will be taking advanced orders for delivery in late 2017 for what promises to be an even more exceptional wine. Product Description

Tasting Notes: A delicate wine that has a complex nose of  ripe blackcurrant, cherries, plums and raspberries augmented by the deeper presence of smoke, toast, chocolate, coffee and tobacco.  In the mouth, its finesse is obvious, its  production gives it a silky and youthful finish full of fine subtle tanins that will ensure longevity if laid down
Classification: Non Classified – Charente Maritime (Don’t let that fool you, this is a quality wine)
Grape: 70% Merlot – 30% Cabernet Sauvignon
Strength: 14.5%
Serve at: Recommended Room temperature 16°C to 18 °C
Serve with: Red meats, strong cheeses, best friends
Soil: Combination of clay and chalk, well drained
Yield:  < 20 hl/ha (3-4 bunches per vine)
Cultivation: Limited production, manual intervention and selection at harvest
Vinification: Manual selection of grapes prior to vinification in small quantities (circa 600 litres) pressed traditionally by foot.  no additional yeasts or additives to aid the fermentation.  Some sulphites for clarification.  Malolactic fermentation stored in oak for 24 months
